Religion Coffee

Sergio here, let me tell you this story firsthand, since it marked a major turning point in my relationship with the hospitality industry.

The story begins in London, where I lived for two years and discovered the world of specialty coffee. I trained as a barista and bartender at the European Bartender School in London and worked in various cafes, learning the most current trends in the hospitality and gastronomy industry.

In love with specialty coffee and determined to bring that concept to Madrid, I began to shape my project. Two key people were Dario, a connoisseur of healthy trends such as the Blue Latte and the famous açai bowls, and Virginia, a communication expert, who I had worked with at Gigi Meet Me Bar. Together, we formed the perfect team to carry out this ambitious project.

After several trips to London and Berlin, we defined our concept and started looking for venues. Finally, we found a beautiful corner in María de Molina, in front of the Instituto de Empresa. From the first moment, we knew that this was the ideal place, it was almost love at first sight.

We formalised our partnership and, although our budget was tight, we surrounded ourselves with the best collaborators to bring our vision to life.

And voila, we got it!

Religion Coffee opened its doors to great success from day one. I want to give a special shoutout to Beeb, our head chef, who helped us develop a well-crafted and appropriate menu for our concept.

A few months after opening, a severe health blow forced me to step away from the project. Virginia took complete leadership and ownership of the restaurant, allowing me to take a breather and seek personal stability back in my small town. Today, Religion Coffee continues to thrive and has added a new location, thanks to Virginia’s excellent management.
