Fonda Can Miserias
Reviving a historic fonda in Barcelona and breathing new life into it through gastronomy, operations and identity.
Fonda Can Miserias was born from a historic venue in central Barcelona that had been closed for years, with no operational structure or clear direction of what it could become.
The challenge was not simply to open a restaurant.
It was about building a business capable of reviving the essence of the traditional Catalan fonda without falling into empty nostalgia or the usual “Mediterranean concept” seen countless times before.
From the outset, we approached the project with a clear idea: to create a contemporary, honest fonda that was genuinely built to work in real conditions.

Gastronomy with memory, without disguise
The gastronomic proposal was built around traditional Catalan and Spanish comfort cuisine: stews, spoon dishes, local produce and familiar recipes. But reinterpreted through a more contemporary and accessible lens.
There was a very fine line:
Go too contemporary and you lose authenticity; stay too traditional and the project stops resonating with today’s city. The challenge was finding the right balance.
Because bringing a fonda back to life is not about checkered tablecloths or nostalgic imagery. It is about understanding what made those places unique, and reinterpreting it for a contemporary experience.
Operational structure from day one
One of the most important parts of the project was building the entire internal structure of the restaurant from scratch.
We developed:
- Workflows
- Kitchen and front-of-house protocols
- Organisational systems
- Operational control tools
- Team hierarchy structure
- Job descriptions and responsibilities
- Monitoring and execution systems
It feels less glamorous than designing a menu. This may feel less sexy than designing a menu, but this is where a restaurant is made or broken. Because a good idea without operations lasts about as long as a warm beer in August.
Team, experience and reality.
We also took part in building the initial team for the project, helping select key profiles for both kitchen and front-of-house.
The goal was not simply to fill positions, but to build a way of working aligned with the kind of experience we wanted to create.
Because in the end, guests don’t only remember what they eat. But how they felt in the space.
Results
Fonda Can Miserias evolved from a closed, directionless space into a restaurant with its own identity, operational structure and a clear gastronomic proposition within the Barcelona scene.
A project that reflects exactly how we understand hospitality: less noise, more reality. Less gastronomic posturing, more places that work, connect, and have something to say.
