Lady Madrid

Bringing structure to a project with potential, turning it into a stronger, more profitable and recognisable business.

Lady Madrid already had the hardest thing to achieve: a beautiful space, great energy and guests who genuinely connected with the concept. What it lacked was something we see time and again in hospitality: a lot happening at once, but very little structure holding it all together.

The client approached us at a pivotal moment, when it was necessary to pause, understand what was holding the business back, and create a clear direction for sustainable growth. That’s where our work began.

A new menu designed to sell more effectively

One of the first changes was a complete redesign of the gastronomic offering.

The new menu was designed with several objectives in mind: improving profitability, increasing average spend and creating a stronger alignment with the venue’s identity.

We focused on:

  • Menu structure
  • Gastronomic storytelling
  • Pricing optimisation
  • Margin improvement
  • Physical menu design
  • Relationship between product and experience

The goal wasn’t to create a “more modern” menu.
It was about creating an offering that made sense both for the business and for the type of customer they wanted to attract.

Because a menu does more than communicate what you eat. It also communicates how well a restaurant understands what it wants to be.

Quality, warmth and operational excellence

Another key focus was professionalising the guest experience without losing its warmth and sense of connection.

We developed:

  • Operational manuals
  • Front-of-house service protocols
  • Workflows
  • Customer service standards
  • Organisational tools for the team

It sounds basic. But this is where many restaurants struggle: when day-to-day operations depend more on firefighting than on having the right structure in place. Our role was to bring order without turning the venue into something rigid or impersonal.

Repositioning the brand without losing its identity

We also supported the project’s rebranding and communication strategy.

We worked on the brand identity, tone of voice and overall brand direction to achieve something that sounds simple but is remarkably difficult to do: making everything feel like it belonged to the same place.

Menu.
Social media.
Space.
Service.
Storytelling.

Everything had to speak the same language. Because when a hospitality brand is truly coherent, you notice it before you even sit down to eat.

Team and structure

We also supported the restructuring of the team and the recruitment of key talent to strengthen day-to-day operations.

The key wasn’t simply hiring new people. It was about creating a clearer, more sustainable way of working, aligned with the experience the restaurant wanted to deliver.

Because no manual can save a project if the team cannot sustain it.

Results

After a year of support and collaboration, Lady Madrid evolved into a far stronger, more profitable and more recognisable business within Madrid’s dining scene.

Sales eventually doubled following the implementation of the changes. But beyond the numbers, what mattered most was something else: the business moved from operating through improvisation to operating through informed decision-making.

A clearer project.
A more coherent one.
A more profitable one.
And one far better prepared for growth.

Because in the end, the restaurants that stand the test of time are not the ones that make the most noise. They are the ones that build a structure capable of sustaining what they promise.
