Building a gastronomic experience around chess without falling into the clichés of a themed restaurant.

Gambit Madrid already had something that is difficult to achieve: a clear identity.

The venue served as a gathering place for the contemporary chess community, combining specialty coffee, a wine bar, culture and community in the heart of Madrid.

The challenge lay elsewhere: the gastronomic offering was not yet operating at the same level as the concept itself. There was no offer capable of increasing average spend, encouraging repeat consumption or genuinely enhancing the overall experience of the venue.

That’s where we came in.

Gastronomy serving the concept

From the outset, we were clear about one thing: this was not about simply naming four dishes after chess pieces.

The concept needed to feel fully integrated within the project’s cultural universe, without becoming a gimmicky experience. We developed the culinary narrative around the historical journey of chess: from Persia and the Arab world to Europe and the Mediterranean.

From there, we built a menu inspired by Persian, Mediterranean and Spanish flavours, using the language of the game as the guiding thread.

Openings.
Gambits.
Castles.
Checkmate.

Everything was part of the narrative. But always grounded in a gastronomic logic, not just aesthetics.

That’s why we developed a proposal:

  • Easy to share
  • Aligned with the venue’s pace
  • Easy to enjoy during gameplay
  • Visually appealing
  • Operationally simple
  • Designed for different moments of the day

The idea was simple: if guests stay longer and consume more naturally, average spend increases without the experience feeling forced.

Less complexity, more agility

We also worked on the operational side to ensure the kitchen could handle the volume and pace of the venue without unnecessary complexity.

We designed a proposal based on:

  • Simple production
  • Optimised mise en place
  • Speed of service
  • Easy regeneration and assembly
  • Low technical complexity

Because more often than not, the problem isn’t designing attractive dishes. The real challenge is getting them out consistently on a packed Saturday night service.

Results

Gambit Madrid evolved from having a strong identity but a secondary gastronomic offer to a fully integrated concept where food became an essential part of the overall experience.

A project where food doesn’t act as a complement, but as an active part of the narrative, guest dwell time and the business model. Because when concept, operations and experience play the same game, it shows.
